L'Épiphanie est unefête chrétienne qui célèbre la présentation de Jésus aux Rois Mages; Balthazar, Melchior et Gaspard. Elle a lieu le 6 janvier(ou le premier dimanche de l'année après le 1er janvier).
La tradition veut que l'Épiphanie soit l'occasion de « tirer les rois » : une figurine est cachée dans une pâtisserie et la personne qui obtient "cette gève" devient le roi de la journée. Cette pratique trouverait son origine dans les Staurnales de la Rome antique.
La fève a été remplacée ou est accompagnée d'un petit sujet caché à l'intérieur de la pâte de la galette, la personne qui trouve la fève sera symboliquement couronnée roi ou reine et devra offrir la prochaine galette, celle qui a le sujet devra offrir la boisson (mousseux, muscat, ou champagne...).
Dans la moitié nord de la France, depuis le XIVe siècle on déguste la galette des rois à la frangipane (feuilleté fourré avec une crème d'amandes), à l'occasion de cette fête. La tradition veut que l'on partage la galette en autant de parts que de convives, plus une. Cette dernière, appelée « part du Bon Dieu », « part de la Vierge » ou « part du pauvre », était destinée au premier pauvre qui se présenterait au logis.
Dans le sud de la France, une brioche en forme de couronne, garnie et couverte de fruits confits est servie. Un santon remplace la fève.

The tradition wants that the Epiphany is the occasion of " to choose kings ": a figurine (trinket or bean) is hidden in a cake and the person who obtains it becomes king of the day. This practice would find its origin in Saturnales of antique Rome.
The bean was replaced or is accompanied with a small subject hidden inside of the pancake, the person who finds it will symbolically be crowned king or queen and will have to offer the next pancake, the one who has the subjector trinket will have to offer the drink (sparkling wine, muscatel wine, or champagne).
In north half of France, from the XIVth century we savour the cake ("galette des rois", kings cake) with almond paste. The tradition wants that we share the pancake in so many parts as dinner guests, plus one. This last one, called " part of the Good God ", " part of the Virgo " or " part of the poor man ", was intended for the first poor man who would appear at the lodging house.
In the South of France, a brioche in the form of crown, stocked and covered with candied fruits is served. A Santon figure replaces the bean.
